Fermented Veggies
Fermented veggies are the way to go, if you’ll pardon the pun! Great tasting and rich in nutrition all at the same time! Put on top of a salad or set out in a small bowl as a side dish. The fermenting process contributes to good digestive health.
The fermenting process overall increases levels of Vitamin C by 20 times and also increases the amount of B Vitamins. Fermenting produces antibiotics and anti-carcinogenic substances.
For our ferments, we use organic veggies such as cabbages, carrots, and beets sourced from local farms. We produce fresh batches according to the season, and then ferment them at least two to four weeks before bringing them to our market tent.
